Exercise last week
Sunday: jogged 1.75 miles, lasting ~1 hour
Monday: none
Tuesday: slow-jogged to workout room -- about 1 mile, about 30 min.
Wednesday: none
Thursday: 20 min. on elliptical machine, supposedly burning 140 kCal; yoga class 80 min.
Friday: none
Saturday: walked/jogged the canyon trail, ~4 miles, ~2 hours

Current waistline: 32"

Last week was rather slack. I barely made my three days of cardio. At least Saturday's walk was relatively strenuous for me. Right now I just got back from a jog around the neighborhood. I'm finding dance music, with its quick beat, to be good motivation; but it's hard to stay motivated by music when my earphones are constantly falling out of my ears.

For Christmas, my sister-in-law gave us a Mason jar of home-assembled cranberry muffin mix with baking instructions attached. This was very possibly the most enjoyable Christmas gift I received this past holiday. The muffins turned out delicious: fluffy, sweet but not too sweet. And, the recipe calls for only one egg and no butter, so it must be fairly low-fat and low-cholesterol, which matters to me. I don't know where she got the recipe, whether it was from her family or from a cookbook or what, but I'm recording it here. Then I'll probably pass along the card it's written on to someone else.

Dry ingredients (in jar):
  • 2 cups flour
  • ½ cup sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • ½ cup walnuts
  • 1 cup dried cranberries
Wet ingredients:
  • 1 egg
  • ¾ cup milk
  • ½ cup oil
Preheat oven to 400°F. Grease muffin pan. In a mixing bowl, beat the egg. Stir in oil and milk. Stir in dry ingredients. Spoon into muffin pan and bake 15 minutes, or until lightly browned and a toothpick inserted into centers comes out clean.
